Chicken Pecan Apple Salad - My Way |

my chicken pecan apple salad - a go to for us for left over chicken. Particularly AWESOME for our left over smoked chicken (recipe here) but any old chicken will do. Yummyy! Ingredients:
for the sauce |
1 t dry mustard |
1 t water |
1 t white wine or apple cider vinegar |
2 t mayonaise (i have used miracle whip too in a pinch) |
pinch sugar |
1 t honey |
1 small clove garlic, grated |
1/2 t horseradish sauce |
1 t tiger sauce (optional but awesome) |
everything else |
4 c (approx.) chicken |
1 stalk celery, diced |
1 c apple - diced |
2 t mayo |
1/4 c dried currants or cherries (optional) |
1/2 c toasted pecans |
salt and pepper to taste |
Directions:
1. mix ingredients for sauce - set aside 2. mix sauce, chicken, fruit and celery in bowl....if you salad needs to be wetter, gradually add from the 2 T of mayo until it suits you (I usually don't need to add the additional mayo) 3. salt and pepper to taste |
