Chicken Patties

A great way to use leftover chicken.
Ingredients:
3/4 cup water
1/4 teaspoon salt
1 cup mashed potatoes
1 garlic clove, minced
1/2 cup parmesan cheese, grated
1 1/2 cups chicken, cooked and finely diced
1 egg, separated
3 tablespoons breadcrumbs, fine and dry
2 tablespoons parmesan cheese, grated
3 tablespoons canola oil
Directions:
1. Gradually add water to mashed potatoes to make creamy (all the water may not be needed).
2. Add garlic and 1/2 cup of Parmesan cheese.
3. Stir in chicken and egg yolk.
4. Beat egg white until stiff, fold into chicken mixture.
5. Form into 8 patties.
6. Combine bread crumbs and remaining Parmesan cheese in a shallow pie plate.
7. Dredge patties in crumbs.
8. Heat oil in a large skillet over medium heat.
9. Add patties and cook about 3 minutes on each side.
