Chicken Pate With Fresh Herbs

Ingredients:
1-1/2 cups (375 ml) softened butter
1 onion, chopped
1-2 garlic cloved, chopped
1 lb. (500 g) chicken livers, trimmed and cut
1 tsp. (5 ml) fresh chopped thyme
1 tsp. (5 ml) chives
1 tsp. (5 ml) marjoram
1 tsp. (5 ml) tarragon
3 tbsp. (45 ml) port or sherry (optional)
Directions:
1. Melt 1/3 cup (75 ml) of butter in a skillet.
2. Add onion and cook over low heat until soft and translucent.
3. Add garlic and cook a few minutes more.
4. Remove from skillet and set aside.
5. In same skillet, stir-fry chicken livers over medium-high heat until barely pink inside.
6. Place chicken livers, onion mixture and remaining butter in food processor or blender.
7. Process until smooth.
8. Add chopped herbs and port and mix well.
9. Pack into individual ramekins or a 4-cup (1 L) serving dish.
10. Refrigerate for 1 day before serving.
11. Serves 4 - 6
