Chicken Parmesan With Basil |

Another chicken dish I can't wait to try.. Ingredients:
4 chicken fillets |
1 cup breadcrumbs |
1/3 cup parmesan cheese, grated |
1 tablespoon parsley, chopped |
3 slices bacon, chopped |
90 g butter |
2 garlic cloves, crushed |
1 teaspoon worcestershire sauce |
1/2 teaspoon dry mustard |
1/3 cup oil |
1/4 cup white vinegar |
1 garlic clove, crushed |
1 cup fresh basil leaf, chopped |
1/3 cup cream |
1 egg yolk |
salt & pepper |
Directions:
1. Combine breadcrumbs, cheese & parsley. 2. Cook bacon until crisp & add to breadcrumb mixture. 3. Melt butter in a saucepanj, add garlic, worcestershire sauce and mustard. Mix well. 4. Dip chicken fillets in butter mixture and place in an ovenproof dish. Press crumb mixture on top of each fillet. 5. Bake at 180.C for 20-25 minutes. 6. Prepare sauce: Combine all ingredients except egg yolk & stir until heated through. 7. Add egg yolk & stir until sauce thickens but do not allow to boil. 8. Serve fillets with sauce. |
