I found this recipe on the Elly Says Opa! blog - and what a wonderful idea! This is constructed much like a traditional chicken parmesan, and the flavor is awesome. I hope you like! Ingredients:
1 lb ground chicken |
1/4 cup grated parmesan cheese |
1/4 cup plain breadcrumbs |
2 teaspoons italian seasoning |
1/4 cup chopped parsley |
1 garlic clove, finely minced |
1 shallot, finely diced |
1/2 cup thick spaghetti sauce |
4 slices provolone cheese |
1 cup sliced mushrooms |
2 tablespoons butter |
salt and pepper |
4 sandwich buns |
Directions:
1. Lightly mix together first 7 ingredients for the burgers. Form into 4 patties. 2. Saute mushrooms in 2 Tablespoons butter. Season with salt and pepper. 3. Preheat broiler & spray the broiler pan with a little oil. Broil the burgers for about 4 minutes on the first side, then flip and broil for 3 minutes. Top each chicken burger with 2 tablespoons pasta sauce and a slice (or about 2T) of cheese. Place back under the broiler for 30-60 seconds, until cheese in melted and burger is cooked through. Brush buns with a little melted butter, sprinkle with Parmesan cheese and a little Italian seasoning, and place under broiler just until toasted. |
