A reduced -calorie version of classic chicken parmesan Ingredients:
4 oz chicken breast |
2 oz pasta sauce |
1 oz part-skim mozzarella cheese, shredded |
1 tbsp olive oil |
1 tbsp parmesan cheese, grated |
2 oz angel hair pasta |
1 oz fresh mushrooms, sliced |
1/2 egg white |
1 oz bread crumbs |
1 clove garlic, minced |
1 tbsp oregano |
1 tbsp basil |
Directions:
1. pound chicken breast until thin 2. dip chicken breast in egg white and coat with Italian seasoned bread crumbs 3. add minced garlic and olive oil to skillet 4. brown both sides of coated chicken breast 5. drain on paper towel 6. saute sliced 7. mushrooms 8. add pasta sauce and oregano, garlic and basil 9. pour 1/2 pasta sauce and mushrooms over chicken 10. top chicken with mozzarella cheese and paremesan cheese. 11. Serve with Angel hair pasta and remaining pasta sauce/mushrooms 12. steamed broccoli, green beans, salad, etc. |
