Chicken Paprikas (Chicken and Dumplings) |

My Great-Grandma used to make this all the time. Ingredients:
1 onion, chopped |
4 tablespoons butter |
1 tablespoon paprika |
3 lbs chicken pieces (can use more or less) |
1 1/2 cups water |
8 ounces sour cream |
1/2 teaspoon salt |
1 cup flour |
2 eggs, beaten |
1/4 cup milk |
1 teaspoon salt |
Directions:
1. Brown onion in butter. Add paprika, salt, and chicken. Cook for 10 minutes. 2. Add water and simmer slowly until chicken is tender (I usually let mine simmer about 45 minutes.) 3. Meanwhile, prepare the dumplings by combining all ingredients. Scrape bits of the sticky dough from a plate into boiling water (or use a dumpling maker if you have one.) Cook dumplings for 15 minutes. Rinse with cold water and drain. 4. Once chicken is tender, remove it and set aside. Stir sour cream into the pot, making a thin gravy. Add dumplings and then chicken. Serve hot. |
