Adapted from the can label. Sometimes the best and simplest recipes are found right on the can. Ingredients:
1 (14 1/2 ounce) can diced tomatoes with basil, garlic and oregano, drained, liquid reserved |
2 tablespoons olive oil |
1/4 cup mint, chopped |
2 garlic cloves, minced |
8 ounces orzo pasta, cooked and drained |
1 (10 ounce) can chicken, drained or |
1/2 lb chicken, cooked and cubed |
1 medium cucumber, unpeeled and diced |
1/4 cup green onion, chopped |
2 ounces feta cheese, crumbled |
1 cup fresh spinach, shredded |
Directions:
1. In a small bowl, combine reserved tomato liquid, olive oil, mint and garlic to form dressing; stir. 2. In a larger bowl, combine cooled pasta, diced tomatoes, chicken chunks, cucumber, green onion and feta. Add tomato dressing and toss to coat. 3. Refrigerate to chill, at least 30 minutes. Stir in spinach just before serving. |
