Easy onion chicken soup perfect for a rainy night, or comfort food for a cold. Ingredients:
1 large yellow onion |
2 tbs olive oil |
1 roasted chicken (pick up from the store) |
1 large box elbow macaroni |
2 boxes chicken stock (32 oz each) |
salt |
pepper |
Directions:
1. Add olive oil to a skillet 2. Rough chop whole onion, add to skillet and saute till begin to brown 3. Pour all chicken stock into a soup pot and heat on low. 4. Skin roasted chicken, discard 5. Tear chicken into bite size chunks, set aside. 6. When stock is beginning to boil, add all macaroni, and turn heat to low 7. Let cook for 10 minutes 8. Add browned onion from skillet, add chicken 9. Heat for 5 minutes and serve, add salt and pepper to taste. |
