My mother's recipe - very easy one-pan prep. Great for a weeknight. Ingredients:
1 tablespoon vegetable oil |
1 lb boneless skinless chicken breast, cut into chunks |
1 (15 ounce) can tomato sauce |
1 (15 ounce) can whole kernel corn, drained |
1 (4 ounce) can green chilies |
1 tablespoon chili powder |
1 tablespoon onion powder |
Directions:
1. Heat oil in deep skillet over medium high heat. Add chicken and cook 5 minutes, stirring frequently. 2. Add tomato sauce, corn, chilies, chili powder and onion powder. 3. When this comes to a boil, reduce heat and simmer for about 10 minutes, stirring occasionally. 4. To serve, spoon over tortilla chips and top with shredded cheese if desired. |
