Ingredients:
2 tablespoon(s) butter or margarine |
1 cup(s) large onion chopped |
1/2 cup(s) large rib celery chopped |
1 cup(s) green pepper chopped |
1 teaspoon(s) dried thyme |
2 quart(s) chicken broth |
3-4 cup(s) chicken chopped |
2 whole(s) bay leaves |
1 1/2 teaspoon(s) salt |
1/4 teaspoon(s) black pepper |
1/4 teaspoon(s) cayenne |
1 can(s) 14 oz. can diced tomatoes |
1/2 cup(s) green onion (optional) sliced |
1 pound(s) okra - fresh or frozen trimmed and sliced |
Directions:
1. Melt butter in skillet and saute onion, green pepper, celery and thyme until vegetables are tender, but not brown. Add broth, chicken, bay leaves, salt, pepper, cayenne and tomatoes. Bring to a boil, reduce heat and simmer for 1 hour. Add green onions and okra, cook uncovered 1/2 hr. |
