Ready, Set, Cook! Hidden Valley Contest Entry. This is a recipe that I threw together one night and had the best feedback, so it is now on our menu! Ingredients:
4 chicken breasts |
1 (1 ounce) package hidden valley original ranch seasoning mix |
3 shallots |
1 (16 ounce) package breadcrumbs |
16 baby carrots |
8 red potatoes |
16 ounces greek yogurt |
1/2 cup parmesan cheese |
1 bunch fresh chives |
1 cup chicken broth |
Directions:
1. Mix 1 container of breadcrumbs, 1/2 cup of Parmesan cheese and 1 package of HVR Seasoning Mix with 16 oz. of Greek Yogurt. 2. Cover 4 chicken breast in a baking pan with the yogurt mixture and bake in 375* oven for about 25min. 3. Take the chicken out and add the baby carrots, red potatoes (cut in quarters), chopped shallots and 1 cup chicken broth to the pan. 4. Bake another 20-25 minute until potatoes are fork tender. 5. Add fresh Chives over the top of the chicken and veggies. |
