Chicken N Soba Noodle Soup |

From Cooking Light (with some personal renditions). A nice twist on the everyday chicken noodle soup. I made this with homemade chicken stock, which I thinks make all the difference, but either way - very tasty! Read more ! Ingredients:
2 t dark sesame oil |
1 1/2 t sesame seeds |
1 cup chopped red pepper |
3/4 cup chopped onion |
3/4 t salt |
2 t minced peeled fresh ginger |
3 (or more if like garlic) cloves minced garlic |
2 t low-sodium soy sauce |
28 oz. chicken broth (or homemade) |
1/2 t (or more if like spicy) hot chile sauce, such as siricha |
2 chicken breasts |
2 oz. soba noodles |
4 cups shredded bok choy |
1 cup green part of scallions |
3 t basil (use fresh if have it - i did not but fresh herbs always tastier) |
1 t lime juice |
Directions:
1. Heat sesame oil in dutch oven over medium heat 2. Add red pepper, sesame & onion, cook 5 minutes or until tender, stirring frequently 3. Add 1/4 t salt, ginger & garlic, cook 1 minute stirring constantly 4. Add 1/4 t salt, soy sauce, chile sauce, broth & chicken 5. Bring to boil, reduce heat and simmer one hour 6. Remove chicken, cool slightly & shred with two forks 7. Add soba noodles, cook 5 minutes or until done 8. Stir in bok choy, reduce to simmer 9. Stir in 1/4 salt, green onions, basil 10. Take off heat stir in lime juice 11. (I did not add salt to mine since I had homemade stock and didn't feel I needed salt. I also ate it with some sourdough bread) |
