Chicken N Rice Casserole Bake |

This is one of my favourite easy, peasy, quick to throw together dinners that make often always using ORGANIC/FREE RANGE ingredients (you don't have too of course) Ingredients:
2 cups rice |
6 chicken thighs (bone and skin on) |
2 (420 g) cans soup, of your choice |
1/2 cup celery |
1 onion, chopped |
1 (40 g) packet french onion soup |
Directions:
1. Place rice into casserole dish, place chicken on top, add vegetables, combine french onion soups with tinned soup and pour over the chicken and rice with 2 cans water. 2. Bake uncovered 2 hours. |
