This is a dish my mom made up one night about 10 years ago and my dad & I went on and on about it. Very easy and very yummy! Ingredients:
1 lb boneless chicken strips or 1 lb boneless chicken breast |
1 tablespoon butter or 1 tablespoon margarine |
1 tablespoon oil |
1 (8 ounce) package fresh mushrooms |
1 (10 3/4 ounce) can cream of mushroom soup |
3 tablespoons cooking sherry |
1/4 cup cooking sherry |
1 bulb of garlic |
1 teaspoon garlic salt |
1/2 teaspoon black pepper |
white rice |
Directions:
1. Heat 1 tablespoon margarine and 1 tablespoon oil in iron skillet. 2. Brown chicken. 3. Remove and set aside. 4. Add mushrooms to pan and add 3 tablespoon of sherry. 5. Sauté for about 10 minutes. 6. Add soup. 7. Add 1/2 can-1 can water. 8. Add 1/4 cup sherry and stir well. 9. Heat until smooth. 10. Add garlic, garlic salt, pepper and chicken and cover. 11. Cook on low for 20-30 minutes. 12. Serve over rice. |
