This is a family favorite served with rice and extra mushrooms. Ingredients:
16 oz chicken breasts, pounded thin |
1/4 c flour |
1 salt and pepper, to taste |
2 tsp butter |
2 tsp vegetable oil |
4 oz fresh mushrooms |
1/2 c water |
1 tsp cornstarch |
1/2 c chicken broth |
1/2 tsp parsley |
1/4 tsp garlic |
Directions:
1. Season breasts with salt and pepper. Dredge chicken in flour. 2. In skillet, combine oil & butter over medium heat until bubbly. 3. Add chicken and cook until lightly brown (3-4 minutes/side). 4. Remove chicken and set aside. 5. Add mushrooms and saute 5 minutes. 6. Combine water with cornstarch and mix until dissolved. 7. Add water mixture, broth, parsley, garlic, salt and pepper to skillet. 8. Cook until thick (1-2 minutes). 9. Return chicken and cook 1-2 minutes. |
