Chicken & Mushroom Saute

This is a family favorite served with rice and extra mushrooms.
Ingredients:
16 oz chicken breasts, pounded thin
1/4 c flour
1 salt and pepper, to taste
2 tsp butter
2 tsp vegetable oil
4 oz fresh mushrooms
1/2 c water
1 tsp cornstarch
1/2 c chicken broth
1/2 tsp parsley
1/4 tsp garlic
Directions:
1. Season breasts with salt and pepper. Dredge chicken in flour.
2. In skillet, combine oil & butter over medium heat until bubbly.
3. Add chicken and cook until lightly brown (3-4 minutes/side).
4. Remove chicken and set aside.
5. Add mushrooms and saute 5 minutes.
6. Combine water with cornstarch and mix until dissolved.
7. Add water mixture, broth, parsley, garlic, salt and pepper to skillet.
8. Cook until thick (1-2 minutes).
9. Return chicken and cook 1-2 minutes.
