Chicken Mushroom Fettuccine |

A somewhat light take on Carbonara. Ingredients:
200 g high fiber pasta |
1 teaspoon olive oil |
400 g chicken breasts, cut into strips |
2 onions |
2 garlic cloves |
1 cup mushroom, sliced |
400 g light evaporated milk |
2 teaspoons parsley |
1/2 teaspoon pepper |
1 teaspoon salt |
1 cup peas |
Directions:
1. Cook Pasta according to directions. 2. Heat oil in skillet. 3. Onions for 2-3 minutes. 4. Add chicken, garlic, and mushrooms. Saute until chicken is cooked almost through, about 5-6 minutes. 5. Add evaporated milk, pepper, salt, peas and parsley. Bring to a boil. Reduce heat and simmer for an additional 5 minutes. 6. Add pasta, stir to coat, and serve. |
