I think the wine adds extra flavour, but will work just fine with chicken broth in place of the wine. This dish is quick and easy to make Ingredients:
4 -6 chicken breast halves |
salt, to taste |
pepper, to taste |
garlic powder, to taste |
1 tablespoon olive oil |
1 tablespoon butter |
1 tablespoon butter |
2 -3 tablespoons marsala (or you may use chicken broth) or 2 -3 tablespoons white wine (or you may use chicken broth) |
8 ounces sliced mushrooms |
1 large tomato, sliced |
4 -6 green onions, thinly sliced |
8 ounces mozzarella cheese, sliced |
Directions:
1. Pound chicken breast halves between sheets of plastic wrap until evenly thinned out. Salt and pepper both sides then sprinkle lightly with garlic powder. 2. In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. 3. Add chicken to the heated skillet; cook for about 5 minutes on each side. 4. Remove to a baking dish. 5. Add 1 more tablespoon butter to the skillet along with the wine or broth then saute the mushrooms until tender and golden brown. 6. Pour mushroom mixture over chicken in baking dish. 7. Top with tomato slices and sliced green onions. 8. Place Mozzarella slices over all. 9. Bake at 325° for 25 minutes. |
