This is a quick meal to prepare ahead of time refrigerate and pop in the oven. Ingredients:
4 boneless chicken breasts |
1 1/2 cups sour cream |
1 (7 ounce) can green chilies |
1 minced garlic clove |
4 spring onions, chopped |
2 cups monterey jack cheese |
2 tablespoons sliced jalapenos |
salt and pepper |
Directions:
1. Place chicken breasts in bottom of casserole dish and season with salt and pepper. 2. Mix sour cream, chillies, garlic, onions,and 1 c cheese. 3. Pour over chicken. 4. Sprinkle jalapeños on top of chicken cover dish and bake at 350° for 30 minutes. 5. Sprinkle remaining cheese on top and cook for another 15 minutes. 6. Serve over rice. |
