Zippy chicken dish Low cal Low carb Ingredients:
4 boneless chicken thighs |
1 15 oz can diced tomatoes |
cajun seasoning |
2 tsp minced garlic |
1 cup fresh or frozen okra cut up |
2 or 3 tbs. olive oil |
1 cup chopped onions |
i sometimes use diced tomatoes with other ingredients to change the flavor. |
Directions:
1. Sprinkle raw chicken with Cajun seasoning. 2. Saute chicken in 2 or 3 tbs of olive oil until browned on both sides. 3. Remove chicken from pan. 4. Blot lightly the excess oil with a paper towel. 5. Do not remove the browned particles of chicken. 6. Add tomatoes, garlic, onions and okra to the pan and cook on medium until the okra is tender. 7. Additional liquid may need to be added, do not allow to stick. 8. Salt and pepper to taste. |
