Chicken Meatballs a La Diable |

The classic French dish poulet a la diable goes meatball. Fantastic when served with garlic mashed potatoes and pepperocini. Ingredients:
1 lb ground chicken |
1 tablespoon coarse-grain dijon mustard |
1/4 teaspoon crushed red pepper flakes |
1 egg |
1/2 cup breadcrumbs |
Directions:
1. Mix the ground chicken, mustard, and red pepper. Beat the egg in a bowl or glass measuring cup. Add the egg and the breadcrumbs to the chicken mixture. Mix well, then shape into 1-inch balls. 2. Chill for about 2 hours. 3. Bake in the oven at 375 for about 30 minutes, or until cooked through. |
