Chicken Marsala With Mushrooms |

Another interesting recipe for boneless chicken breasts Ingredients:
4 boneless chicken breasts |
salt |
pepper |
1/4 cup flour |
2 tablespoons unsalted butter |
1 tablespoon olive oil |
3 shallots |
1/2 lb sliced mushrooms |
1/2 cup dry marsala wine |
1/4 cup chicken stock |
2 tablespoons chopped fresh parsley |
Directions:
1. Season chicken breasts with Salt and Pepper. 2. Place flour in a shallow bowl-dredge chicken pieces 3. Shake off excess flour. 4. Heat 1 Tablespoon of butter in a skillet over medium high heat until it starts to turn brown. 5. Add olive oil and stir. 6. Add chicken and cook 3 minutes on each side. 7. Lower heat to medium and remove chicken. 8. add the other tablespoon of butter to pan with the thinly sliced shallots. 9. saute 2 minutes and add mushrooms. 10. Raise heat to high and saute until mushrooms are lightly brown and softened. 11. Pour in Marsala wine and let boil for 30 seconds. 12. Add chicken stock place chicken back in pan and cook additional 3-4 minutes. 13. Add chopped parsley and season before serving. |
