Ingredients:
1 1/2 lb chicken breasts, boneless, skinless, cut into 1/2 x 2-inch pieces
1/4 cup flour
1/4 tsp pepper
1 tablespoon olive oil
1/3 cup marsala
16 oz marinara sauce
1/3 lb (to 1/2 lb) mozzarella, part-skim, grated
Directions:
1. Preheat oven 350 degrees.
2. Combine flour and pepper in a plastic bag. Shake chicken in bag until coated.
3. In large frying pan, heat oil over medium-high heat. Add chicken and stir occasionally until lightly browned, about 5 minutes.
4. Add Marsala and simmer until chicken is fully cooked.
5. Spread half of the sauce in to a 7 x 11-inch baking pan. Arrange chicken in one layer in pan.
6. Pour reminder of sauce over the chicken.
7. Sprinkle mozzarella over sauce.
8. Cover with foil. Bake at 350 degrees for 30 minutes.
