Herbed chicken in a sweet Marsala and mushroom sauce This is a recipe I have made many times for quick and easy dinner.. Ingredients:
1/4 cup flour for coating |
1/2 tsp. salt |
1/4 tsp. fresh ground black pepper |
1/2 tsp. dried oregano |
4 skinless, boneless chicken breast halves-pounded 1/4 in. thick |
1 cup sliced mushrooms |
1 sm. onion |
4 tbs. unsalted butter |
4 tbs. olive oil |
1 cup marsala wine- use a good one, it's not that expensive |
1/4 cup cooking sherry |
Directions:
1. Pound chicken until about 1/4 inch thick. 2. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. 3. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. 4. Turn over chicken pieces, and add mushrooms and onions.Cook until onions are soft. 5. Pour in wine and sherry. 6. Cover skillet; simmer chicken 10 minutes turning only once, until no longer pink and juices run clear. 7. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 8.
