Watched a video of this being prepared, decided to make this as Marsala (Veal or Chicken) are one of my favorite dishes. Ingredients:
2 boneless skinless chicken breasts |
1 shallot, minced |
2 tablespoons fresh parsley, finely chopped |
2 tablespoons olive oil |
1 tablespoon flour |
1 cup fresh mushrooms, sliced |
2 cups chicken stock |
1 cup marsala wine |
salt and pepper, to taste |
1 teaspoon butter, cold |
Directions:
1. Sprinkle chicken with salt and pepper. 2. Add olive oil to pan, heat pan on medium heat. 3. Add chicken skin side down to pan and brown, about 2 minutes each side. 4. Remove chicken from pan. 5. Add mushrooms to pan, sprinkle with salt and pepper, saute for 5 minutes. 6. Add shallots and saute for 4-5 minutes. 7. Sprinkle mushrooms with flour and saute an additional 5 minutes. 8. Add wine to pan and reduce by about 1/3 to thicken sauce. 9. Add chicken stock, simmer to reduce to thicken sauce. 10. Add chicken to pan, reduce heat to low to allow for gentle simmer. 11. Simmer chicken 5 minutes. 12. Add parsley, stir to combine. 13. Add butter, stir to melt. 14. Remove from heat and serve. |
