This recipe came from Zonya Foco's Lickety Split Meals . It is a very quick, and relatively healthy. Ingredients:
1 tablespoon olive oil |
1 onion |
1 tablespoon chopped garlic |
1 (7 ounce) can mushrooms |
16 ounces boneless skinless chicken breasts |
1/3 cup marsala wine |
2/3 cup chicken broth |
1/4 teaspoon salt |
4 teaspoons cornstarch |
1 dash pepper |
Directions:
1. Cut the onion into wedges. Heat oil in a nonstick skillet over medium-high heat, and saute onion, garlic and mushrooms. 2. Lightly salt and pepper the chicken and add it to the skillet, cook 5 minutes on each side. 3. Mix the chicken broth and cornstarch together, and add to the skillet. Reduce heat to low and simmer until the chicken is done. About 5 minutes. |
