Great summer salad! Easiest I've seen. Ingredients:
1 (10 ounce) bag baby spinach leaves |
1 medium mango, peeled, sliced |
1 medium avocado, peeled, sliced |
1 small red onion, thinly sliced |
2/3 cup reduced-fat light raspberry vinaigrette dressing (kraft light done right!) |
2 cups cooked chicken, strips (about 10 oz) |
Directions:
1. TOSS spinach with mango, avocado and onion in large bowl. 2. Add dressing; mix lightly. 3. SPOON onto 5 plates. Top with chicken. Serve immediately. |
