Ingredients:
1/2 cup red onion(s), thinly sliced
1/4 cup fresh lime juice
1 tbsp olive oil
1/2 tsp ground cumin
1/4 tsp tabasco sauce
2 1/4 cup jicama, diced
1/2 pound chicken, shredded
1 mango, cut into 3/4-inch chunks
1/2 cup cilantro, fresh, chopped
Directions:
1. Combine onion, lime juice, oil, cumin and hot pepper sauce in a large bowl;
2. let stand 10 minutes, tossing occasionally, until onion starts to wilt.
3. Add jicama, chicken, mango and cilantro; toss to mix and coat.
4. Yields about 1 1/4 cups per serving
