Chicken Mango Salad with Jicama |

Preparation Time | 20 min Cooking Time | 0 min Level of Difficulty | Easy main meals | This salad has great crunch thanks to jicama, a root vegetable with crisp, sweet, white flesh, that is widely available at most large supermarkets. Ingredients:
1/2 cup red onion(s), thinly sliced |
1/4 cup fresh lime juice |
1 tbsp olive oil |
1/2 tsp ground cumin |
1/4 tsp tabasco sauce |
2 1/4 cup jicama, diced |
1/2 pound chicken, shredded |
1 mango, cut into 3/4-inch chunks |
1/2 cup cilantro, fresh, chopped |
Directions:
1. Combine onion, lime juice, oil, cumin and hot pepper sauce in a large bowl; 2. let stand 10 minutes, tossing occasionally, until onion starts to wilt. 3. Add jicama, chicken, mango and cilantro; toss to mix and coat. 4. Yields about 1 1/4 cups per serving |
