Chicken Mandarin Salad With Sesame Ginger Dressing |

We love this salad as meal. It has became rather cliche with all the variations in fast food places but this homemade version is easy to make and tasty. Ingredients:
1 cooked chicken breast cut in thin slices (4-6 oz) |
1/2 head of napa cabbage, washed, dried, and shredded |
1 small can mandarin oranges |
1 t almond slivers, toasted |
1/2 c lowfat or nonfat mayonnaise |
1/4 c rice wine vinegar |
3 t honey |
2 teas lime juice |
1/2 teas minced garlic |
1 teas minced ginger (fresh, but half the amount of ginger powder can be substituted in a pinch) |
1 teas sesame oil |
Directions:
1. Dressing 2. Whisk together the mayonnaise, vinegar,honey, sesame oil, lime juice, ginger and garlic. Set a side and let sit for 15 minutes 3. In a salad bowl layer the napa, oranges, chickens, and almonds 4. Add dressing and toss ( you may not need to use all the dressing) 5. Enjoy |
