Chicken-Mandarin Orange Spread Sandwiches |

From Southern Living. Ingredients:
12 slices raisin bread |
1 (8 ounce) package cream cheese, softened |
1 1/2 cups chopped cooked chicken breasts |
1/2 cup chopped pecans, toasted |
1 -2 tablespoon mayonnaise |
1/4 teaspoon dried thyme |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup mandarin orange segments |
Directions:
1. Trim crusts from bread slices. 2. Cut each bread slice into 4 triangles; place bread triangles on a baking sheet. 3. Bake in a 400°F oven for 5 minutes or until toasted. 4. In a bowl, combine cream cheese and the next 6 ingredients until well blended. 5. Cover and chill until ready to serve. 6. Spoon 1 tablespoon cream cheese mixture on each raisin bread triangle; top each with a mandarin orange segment. |
