A refreshing and healthy salad. Served chilled and best with any meat dish. Ingredients:
500 grams elbow macaroni |
1 large chicken breast, boiled and shredded |
1 cup boiled, diced carrots |
1 cup raisins |
1 cup diced sweet ham |
1 cup frozen peas |
1 cup pineapple chunks |
1/2 cup diced red capsicum |
3 cups mayonnaise or any low-cal equivalent (adjust to suit taste) |
dash of salt and pepper |
Directions:
1. Boil macaroni according to package instructions. Drain and set aside. 2. In a large bowl, mix all the ingredients then season to taste. 3. Chill for at least 1 hour before serving. |
