an AMAZING soup. The taste just takes you buy surprise at first but leaves you craving more and more! It's just too delicious to miss out on! The combination of flavors are just awesome. Ingredients:
1 (14 1/2 ounce) can diced tomatoes, undrained |
1 cup chopped onion |
3 garlic cloves, minced |
2 teaspoons dried oregano leaves |
1 bay leaf |
1 1/2 cups shredded cooked chicken |
1 1/2 quarts chicken broth |
1/2 cup fresh lime juice |
salt and black pepper |
1 cup shredded monterey jack and cheddar cheese blend |
1/2 cup chopped cilantro |
Directions:
1. Mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot. Cook on medium-high heat 10 minutes, stirring occasionally. 2. Add chicken, chicken broth and lime juice. Bring to boil. Reduce heat to medium-low; simmer 30 minutes. Remove and discard bay leaf. Season soup with salt and black pepper to taste. 3. Serve in soup bowls topped with cheese and cilantro. May also top with sour cream & tortillas if desired! |
