From Calico Cupboard Cookbook. Ingredients:
1/4 cup butter |
4 chicken breasts |
1 onion, chopped |
1 garlic clove |
1 cup chicken broth |
1 (6 ounce) can mushrooms |
1 1/2 teaspoons paprika |
1 teaspoon ginger |
1/4 teaspoon chili powder |
1 cup tomato |
2 tablespoons cornstarch |
1 cup heavy cream |
Directions:
1. Melt butter in Dutch oven and brown chicken. 2. Remove meat and brown onion and garlic. 3. Add seasonings, tomatoes, broth and mushrooms. 4. Put the chicken back in and simmer, covered for 40 minutes. 5. Remove meat and keep warm. 6. Blend cornstarch to smooth paste with the cream. 7. Stir into sauce. Simmer 5 munutes stirring constantly. 8. Pour sauce over chicken and serve with hot noodles. |
