Chicken Lemon Grass Curry |

Vietnamese stir fry Ingredients:
2 stalks lemongrass, smashed and cut into 1 inch pieces |
2 tablespoons oil |
1 small onion, thinly sliced |
2 teaspoons garlic, minced |
1 1/2 lbs chicken, boneless skinless and cut into strips |
1/2 teaspoon black pepper |
2 tablespoons fish sauce |
1 pinch sugar |
1 teaspoon rude curry paste |
1 chile, hot red minced |
2 tablespoons chicken broth (or water) |
1/2 cup coconut milk |
2 tablespoons peanuts, chopped |
1/4 cup cilantro, chopped |
Directions:
1. In a hot wok over high heat add oil, onions and garlic. stir fry 1 minute. 2. Add chicken, pepper, lemon grass, fish sauce, sugar, curry and chili. Stir fry 3 minutes or until fragrant. 3. Add broth and simmer about 5 minutes. 4. Add coconut mils and simmer 3 minutes until slightly thickened and creamy. 5. Garnish with peanuts and cilantro. Serve with rice. |
