Traditional Persian recipe. Warm or cold appetizer or a main course with yogurt or a salad and bread. Najmieh Batmanglij.
Ingredients:
1 lb skinless boneless chicken breasts , diced
2 onions, thinly sliced
1/2 cup extra virgin olive oil
4 eggs
1/4 tsp saffron, dissolved in 1 tbsp hot water
1/2 tsp baking powder
1 tbsp lime juice
1/4 tsp salt
1/4 tsp freshly ground black pepper
Directions:
1. In a skillet, brown the onions in 3 tbsp oil. Remove and set aside. Add chicken pieces and saute until cooked through. Remove and set aside to cool.
2. Break eggs into a bowl. Add the browned onions, saffron water, baking powder, lime juice, salt, and pepper. Beat the mixture thoroughly with a fork.
3. Add the chicken pieces to the egg mixture. Mix, taste, and adjust seasonings.
4. Heat the remaining oil in a skillet, pour in the egg mixture, then cook, covered, over low heat until it has set - about 15 minutes.
5. Turn the kuku over by cutting it into wedges then turning them over one by one. Add more oil if needed, cover and cook 15 minutes longer until golden brown.
