Not too complicated, delicious and good for you! Ingredients:
2 c plain yogurt; non-fat |
4 whole chicken breasts; skinless |
4 tsp curry powder |
2 tsp canola oil |
2 tsp ground coriander |
1 medium onion; peeled & cubed |
2 tsp ginger; minced |
2 large tomatoes; peeled & chopped |
4 cloves garlic; peeled & minced |
4 each bay leaves |
1/2 tsp salt |
1 teaspoon lemon juice |
1 teaspoon cayenne pepper; ground |
Directions:
1. Mix together yogurt, spices, garlic, and lemon juice in a medium bowl. 2. Add chicken, turning to coat. 3. Let stand at room temperature for 30 minutes. 4. Heat oil in a skillet over medium heat. Add onion and cook, stirring about 3 minutes or until lightly browned. 5. Stir in tomato and bay leaves; cook 5 minutes. 6. Add chicken and marinade mixture to pan and mix thoroughly. 7.
