I took a traditional Indian cooking class and this recipe was one we made. It a hit. Ingredients:
2 lbs chicken |
3 tablespoons yogurt |
2 teaspoons sugar |
salt |
2 teaspoons lemon juice |
2/3 cup onion |
1 tablespoon gingerroot |
2 tablespoons garlic cloves |
2 serrano chilies |
1 teaspoon red chili powder |
2 -3 cardamom pods |
2 cinnamon sticks, broken into inch pieces |
2 -3 whole cloves |
2 tablespoons ghee |
Directions:
1. Using a food processor make a paste of the garlic, ginger and onion. 2. Add the paste to the rest of the ingredients except chicken and ghee. 3. Add marinade to chicken pieces. 4. Marinate overnight. 5. Heat ghee in deep skillet. 6. Add marinated chicken. 7. Cook over low heat until you see the oil and marinade separate and chicken is well cooked (30 min). 8. serve hot. 9. Prep time does not include overnight marinating time. |
