A simple supper or barbecue dish Ingredients:
5 oz chicken, cut into 1 square pieces |
1/2 onion, cut into a large dice |
1/2 red pepper, cut into a large dice |
2 oz courgette, sliced |
2 oz (button) mushrooms, wiped clean |
1 tsp olive oil |
1 tsp balsamic vinegar |
1/4 tsp oregano |
1 salt and pepper |
1 1/2 oz brown rice |
Directions:
1. In a large bowl combine all the ingredients except the brown rice and stir to coat. 2. Thread alternate chunks of chicken, pepper, courgette, mushroom and onion onto 2 long skewers and place under a hot grill 3. Cook for 15 - 20 minutes, turning frequently. 4. Serve over the cooked rice. |
