Chicken Kabob, Asian BBQ w/ Thai Salsa Ingredients:
1 tsp low sodium soy sauce |
1/4 tsp wasabi powder |
1/2 tsp ginger root |
6 oz chicken breast, skinless |
1/2 c fresh mint, chopped |
1/4 tsp jalapeno pepper, chopped |
2 tbsp cilantro, chopped |
2 tsp vinegar, white wine |
1/2 c cucumber, chopped |
Directions:
1. For marinade, combine: 2. soy sauce, wasabi powder, grated fresh ginger. 3. Cut chicken breasts into 4 long strips and coat with marinade. Refrigerate 3 hours. Preheat oven to 350F. Bake/grill 15-20 minutes. 4. For Salsa, combine: 5. mint, chopped jalepeno pepper, fresh cilantro, white wine vinegar, chopped cucumber |
