An easy version of popular Cajun dish that can be prepared in one pot. From US Rice Council. Ingredients:
1 1/2 lbs chicken breasts, cut in strips |
1/2 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
1 tablespoon vegetable oil |
3/4 lb smoked turkey sausage, cut in 1/4-inch slices |
2 onions, chopped |
1 large green bell pepper, chopped |
1 cup celery, chopped |
1 minced garlic clove |
2 cups uncooked rice |
1/4-1/2 teaspoon cayenne pepper (caution!) |
2 1/2 cups chicken broth |
1 (15 1/2 ounce) can chopped tomatoes |
Directions:
1. Season chicken with salt and pepper and brown in hot oil in large saucepan. 2. Add sausage and cook an another 2 to 3 minutes. 3. Remove meats from pan; set aside. 4. Cook onions, green pepper, celery and garlic in same saucepan over medium-high heat until slightly softened. 5. Stir in rice, cayenne pepper, broth, tomatoes, chicken and sausage; bring to a boil. 6. Simmer, covered, for 30 minutes. |
