This is one of those soups you can create in 15 minutes by simply opening cans and some easy additions - 30 minutes later you have zoupa Ingredients:
1 cup diced onion |
1/2 cup diced celery |
3 large cloves garlic minced (2 tbsps minced) |
1 tsp fresh ground pepper |
28 oz chicken stock college inn or swansons |
2 cans del monte italian diced tomatoes (14 oz cans) |
1 10 oz package perdue short cuts chicken italian grilled |
1 can pettite peas |
2 tsps italian seasoning |
4 to 5 basil leaves torn not chopped |
2 cubes oxo chicken |
2 to 3 cups water |
1 1/2 cups of a small pasta |
Directions:
1. Over medium heat in a large skillet or pot add 2 tsps olive oil add onions, celery and garlic and cook till onions are tender. Add the pepper. 2. Add chicken stock, oxo cubes, water and chicken that has been cut into 1/2 cubes. Cook for 10 minutes and add the tomatoes, basil and Italian seasonings. 3. Add water and your pasta (uncooked) cook for 10 minutes and add your peas (canned or frozen). 4. Serve with some fresh grated parmasan cheese and a slice of Italian bread - makes for a great meal.
