Light and refreshing and Healthy too! High Protein, low fat and sugar. For a Variation try this with Turkey, Tuna or Salmon.
Ingredients:
12 ounces fresh spinach or 1 head lettuce
3 hard-boiled eggs, diced
8 ounces cooked & diced boneless chicken breasts
6 ounces cherry tomatoes, diced
1 cup raw broccoli, diced
1/2 cup chickpeas
2 tablespoons balsamic vinegar
1/3 cup parmigeano parmigiano-reggiano cheese
1/2 cup chopped walnuts (optional)
Directions:
1. Place Spinach in a large Bowl.
2. Add Chicken, Eggs, Tomatoes, and Broccoli.
3. Sprinkle with the Vinegar and add the cheese and nuts.
4. For a Variation next time try this with Turkey, Tuna or Salmon.
