From the book, Gator Tales Ingredients:
1 (4 lb) fryer, sectioned |
4 tablespoons butter |
2 tablespoons flour |
1/8 teaspoon cinnamon |
1/4 teaspoon salt |
1 1/2 cups orange juice |
1/4 teaspoon tabasco sauce |
1/2 cup slivered almonds |
1/2 cup raisins |
1 orange |
1 dash ground cloves |
Directions:
1. Sprinkle chicken pieces lightly with salt and brown in butter. 2. Remove chicken, add flour, 1/4 t salt, cinnamon and cloves to the drippings. 3. Stir to a smooth paste and add orange juice and Tabasco. 4. Cook until thick. 5. Add chicken, almonds and raisins. 6. Cover and simmer 45 minutes until tender. 7. Add orange sections for last five minutes. 8. Serve with hot rice. |
