Mustard gives the chicken a piquant flavor in this quick to prepare dish. Serve with new potatoes and salad for a midweek meal. Ingredients:
4 chicken breasts, skinless and boneless |
1 tablespoon dijon mustard |
1 cup fresh breadcrumb |
2 tablespoons fresh parsley, chopped |
1 tablespoon dried herbs |
2 tablespoons butter, melted |
salt and pepper |
Directions:
1. Preheat the oven to 350°F Place the chicken in a greased ovenproof dish. Spread with the mustard and season. 2. Mix the breadcrumbs and herbs thoroughly. 3. Press on to the chicken to coat. 4. Spoon over the melted butter. 5. Bake uncovered for 20 minutes, or until crisp and cooked through. |
