Chicken in Creamy Avocado Sauce |

A simple and delicious chicken and pasta recipe. Doesn't take long to prepare but it tastes great. Ingredients:
2 whole chicken breasts |
1 tablespoon olive oil |
1 1/2 teaspoons ground cumin |
1/2 teaspoon salt |
1/4 teaspoon cayenne pepper |
2 garlic cloves, minced |
1 (8 ounce) can stewed tomatoes |
1/3 cup sour cream |
1 avocado, ripe, peeled, seeded, and diced |
1/4 cup fresh cilantro, coarsely chopped |
Directions:
1. Pound chicken to 1/2 inch thickness. 2. Heat oil in a large skillet. 3. Sprinkle chicken with cumin, salt, and cayenne pepper. 4. Place chicken and garlic in skillet and cook over medium-high heat, 2 minutes per side. 5. Add tomatoes; cover and simmer until chicken is cooked through, 5 to 6 minutes. 6. Transfer chicken to serving platter; keep warm. 7. Cook juices in skillet over high heat until thickened, about 2 minutes. 8. Reduce heat to low; stir in sour cream, avocado, and cilantro until well blended. 9. Pour over chicken. 10. Serve over hot cooked linguine. |
