An easy and tasty chicken dish. Ingredients:
1 lb boneless skinless chicken breasts or 1 lb boneless skinless chicken thighs |
1/2 cup finely chopped sweet onion |
2 garlic cloves, minced |
1 teaspoon chili powder |
1 teaspoon ground ginger |
1/2 teaspoon salt |
1 tablespoon lemon juice |
1 cup coconut milk |
2 tablespoons oil |
Directions:
1. In a large skillet, over med-high heat, sauté onion and garlic in oil. 2. Meanwhile, in a mixing bowl, combine chili powder, ginger, salt, lemon juice and coconut milk and stir. 3. Add chicken to skillet and brown both sides. Reduce heat to medium. 4. Pour coconut milk mixture over chicken in skillet and cover. Continue to cook over medium heat until chicken is done; about 20-25 minutes. |
