Chicken in Cardamom-Yogurt Sauce |

From Bon Appétit Magazine, January 2009 Ingredients:
1 1/2 cups plain yogurt |
1 1/2 cups tomato puree, canned |
3 tablespoons cumin |
2 tablespoons coriander |
2 tablespoons canola oil |
4 teaspoons paprika |
1 tablespoon celery seed |
1 1/2 teaspoons cayenne |
1 teaspoon salt |
1 teaspoon ginger |
1/2 teaspoon cardamom |
1/8 teaspoon clove |
5 garlic cloves, minced |
2 lbs chicken thighs, skinned and trimmed |
3 cups cooked basmati rice |
Directions:
1. Preheat oven to 350°F 2. Whisk first 13 ingredients in a 2-quart baking dish. Add chicken; stir to coat. 3. Bake until chicken is cooked through, about 40 minutes. 4. Divide rice among bowls. Top with chicken and sauce. |
