Chicken (In a Zucchini Bikini) Rissoles |

Rissoles are an Aussie classic! This recipe was made up by me when i had limited supplies and wanted my toddler to eat his vegies!!!! I am gluten intolerant, so this recipe suits me too. You may choose to serve with fries, as a burger in a bun/roll or atop seasonal mashed veg! Ingredients:
500 g ground chicken |
1 zucchini, grated |
1 handful of grated mozzarella cheese |
1 carrot, grated |
fresh basil, finely chopped |
fresh parsley, finely chopped |
olive oil |
gluten-free breadcrumbs |
Directions:
1. Mix all ingredients together and shape into rissoles. 2. If you so desire (I desire), roll rissoles in gluten free bread crumbs. 3. Drizzle olive oil into your pan. 4. Cook in pan on medium-high heat. 5. When golden brown they are ready to serve! 6. Voila! Eat! |
