Great chicken to serve while watching football. Crispy .Soaking in buttermilk makes the chicken moist and tender. Ingredients:
24 chicken tenders (1.5 oz. ea) |
2 c flour |
2 c mayonnaise |
2 c buttermilk |
2 tsp cracked black pepper |
2 c panko crumbs |
1 tbs chopped parsley |
1 tbs grated parmesan cheese |
1 tbs cayenne pepper |
salt |
Directions:
1. Set up three shallow bowls. In first bowl,put buttermilk infused with cracked pepper. In second,flour. In third bowl,mayonnaise. In a bag ,add panko crumbs mixed with parsley,cheese and cayenne. 2. Begin by soaking chicken rtenders in buttermilk-pepper mixture for up to 6 hours. Remove from mixture,add to the flour for a light coating. Roll each tender in mayonnaise or use a brush to coat each piece. Toss the tenders in a bag with panko mixture and shake until coated. 3. Lay on a baking tray and bake in 400 degree oven for 12-15 mins. until cooked thru. Enjoy! |
