This is a very basic recipe that began as a way to keep from going grocery shopping for a day or two more. It's very forgiving if you have any ingredient that you are short on or have extra you are trying to get rid of. It has a good blend of flavors and is very simple. Ingredients:
1 tablespoon olive oil |
2 garlic cloves, crushed |
1 onion, diced |
1 carrot, chopped fine |
4 potatoes, diced |
2 chicken breasts, cut into 1 inch cubes |
Directions:
1. In a large pan heat the garlic, onions, and potatoes in olive oil over medium heat. 2. When the onions begin to soften add the carrots and chicken, reduce heat and cover. 3. Cook until potatoes and chicken are done. |
